Transform leftover mashed potatoes into something truly crave-worthy! These golden, crispy-edged garlic mashed potato muffins are loaded with cheddar cheese and fresh chives, then seasoned with Simply Savory Tuscan Garlic Dip Mix for a punch of savory, herb-infused flavor in every bite.   1. Preheat the oven to 375°F. Lightly grease a non-stick muffin pan with cooking spray.
  2. In a large bowl, stir together the mashed potatoes, egg, ¾ cup of the shredded cheddar cheese, ½ tablespoon of the chopped chives, and the Tuscan Garlic Dip Mix until well combined. Season lightly with salt and pepper if desired.
  3. Using an ice cream scoop or large spoon, divide the potato mixture evenly among the prepared muffin cups, pressing the mixture down gently to pack it into each cup.
  4. Bake for 30–35 minutes, or until the muffins are golden brown and crisp around the edges.
  5. Remove the pan from the oven and sprinkle the tops with the remaining ¼ cup cheddar cheese. Return the pan to the oven and bake for 3 more minutes, or until the cheese is melted.
  6. Allow the muffins to cool in the pan for 5 minutes, then carefully remove them. Sprinkle with the remaining chopped chives and serve warm.

Note

*When measuring leftover mashed potatoes, scoop and lightly pack them into a measuring cup, then level off the top. Because mashed potatoes can vary in thickness, if yours are very soft or creamy, add one additional egg to help the muffins hold their shape while baking.
